It’s Monday at 11:35pm. I am just barely scraping in under the wire on the whole “menu plan Monday” concept. I have absolutely no ideas. For once, I don’t have a bunch of recipes left over from the previous week. I don’t even have a CSA box coming this week to provide inspiration. So I’m going to take advantage of the fact that everyone else has already posted their menu plans and make my plan out of their meals. As my favorite guilty-pleasure show, Leverage, would say “Let’s go steal a menu.”

YUM! One question–what do you use in place of the wheat germ in the “meat”ball recipe?
I’ve never made them before, so I was just planning to google “wheat germ substitute” before making the recipe. I’m pretty good at having stuff around to mimic/replace the various functions of wheat, so I figured I’d be okay. I’ll let you know how they turn out!
Oh, damn, I just noticed that there’s wheat flour in there, too. Do post how they turned out, I’ve been looking for some kind of gf veggieballs.
your menu, as usual, looks awesome this week! we’re having veggie burgers this wednesday night as well. ah ha ha! (we’re going to make black bean sweet potato ones.) i bet the shepherd’s pie is awesome, and pasta with meatless balls sounds wonderful & comforting. dan and i haven’t made meatless balls in forever. we might have to give those a go. we hope you enjoy the black-eyed pea millet bowls, we just made something similar this past week with chickpeas and brown rice. thanks for trying one of our recipes – and let us know how it turns out!
You’re doing better than I this week. I haven’t even posted a meal plan. can’t get it together, haven’t been feeling well, etc. I still need to try the Tofu Aloo Gobi!!!!
